Enzytec™ Pyruvate is a UV assay (340 nm) for the determination of pyruvate in food and other sample materials. Pyruvate is converted to lactate with simultaneous oxidation of NADH to NAD. The decrease in absorbance of NADH is directly proportional to the pyruvate concentration in the sample. By using the standard included in the kit, it is possible to create a calibration curve to refer to. Plotting on the calibration curve absorbance values and concentration for each individual sample, the concentration of each sample can be determined. Measuring range: 10-400 mg/l. 50 tests on manual photometer, 500 tests on automated system.
