The determination of potassium in food and beverages by enzymatic analysis makes use of a pyruvate kinase (PK), which is potassium-dependent, in the presence of phosphoenolpyruvate as substrate.
In a further reaction, catalyzed by a specific LDH, the pyruvate formed by the action of PK-K-dependent is analyzed in the presence of NADH.
The decrease in absorbance makes it possible to assess the concentration of potassium in the sample at 340 nm. The kit contains reagents for 400 determinations on automatic system
