Assayet, brugt i USDA-FSIS Microbiology Lab Guidebook, er baseret på antistoffer mod varmebestandige, artspecifikke, muskelrelaterede glycoproteiner. Disse testkits kan detektere så lidt som 1% af kødartens indhold.
